Preheat oven to 160C (fan-forced)
Whisk together olive oil, eggs and sugar. Add lemon juice and zest, mix again.
Add salt, baking powder and half of the flour along with half of the milk. Still using the whisk, mix until 3/4 combined.
Add remaining flour and milk and gently whisk again until just combined. It's ok if there are a couple of dusty flour streaks through the batter, it will sort itself out in the oven.
Pour batter into a lined round cake pan (22cm) and bake for 55-60 minutes, until a skewer comes out clean.
Cool until just warm, sprinkle icing sugar over and enjoy.
