Ingredients

  • 400 grams zucchini finely grated
  • handful dill roughly chopped
  • ¼ cup olive oil extra virgin, plus extra for frying
  • 5 large eggs
  • Salt and pepper
  • 1 cup flour
  • 1 brown onion diced
  • 3 rashers bacon diced
  • 50 grams feta

Instructions

  • Preheat oven to 170 degrees Celsius. Grease a medium sized baking dish and set aside.
  • Heat a little olive oil in a frypan on a medium heat. Add onion and bacon and sauté until onion is translucent.

  • Place grated zucchini into a cheesecloth and squeeze out the excess moisture.
  • Add the zucchini, dill, olive oil, eggs, salt, pepper and flour to a large mixing bowl and whisk to combine.
    400 grams zucchini, handful dill, ¼ cup olive oil, 5 large eggs, Salt and pepper, 1 cup flour
  • Add the cooked onion and bacon and stir through.
  • Pour the mixture into the baking dish. Crumble feta across the top of the slice and place into the oven to bake for 45 minutes or until cooked through and golden on top.

  • Serve warm or cold.
