One-Bowl Lemon Cake

An easy and delicious lemon and olive oil cake.

Course: Dessert

Ingredients

  • 250 mL extra virgin olive oil
  • 3 eggs 60-70g
  • 295 g caster sugar
  • Juice of 2 large lemons
  • Zest of 3 large lemons
  • 1/2 tsp sea salt flakes
  • 1 tsp baking powder
  • 250 g plain flour
  • 250 mL milk any variety you have on hand
  • icing sugar to top

Instructions

  • Preheat oven to 160C (fan-forced)
  • Whisk together olive oil, eggs and sugar. Add lemon juice and zest, mix again.
  • Add salt, baking powder and half of the flour along with half of the milk. Still using the whisk, mix until 3/4 combined.
  • Add remaining flour and milk and gently whisk again until just combined. It's ok if there are a couple of dusty flour streaks through the batter, it will sort itself out in the oven.
  • Pour batter into a lined round cake pan (22cm) and bake for 55-60 minutes, until a skewer comes out clean.
  • Cool until just warm, sprinkle icing sugar over and enjoy.
