Buttery Banana Bread with Passionfruit Cream Cheese Frosting

My buttery banana bread has the lightest, fluffiest passionfruit and cream cheese cloud frosting. It is super easy to make and utterly delicious.

Ingredients

  • 120 g butter softened
  • 170 g brown sugar
  • 4 medium or 5 small bananas mashed
  • 2 eggs beaten
  • 225 g plain flour?1 tsp baking powder?Big pinch of sea salt flakes
  • 250 g cream cheese room temperature
  • 1/3 cup milk
  • 1 tsp vanilla
  • Icing sugar to taste optional
  • 2 passionfruit

Instructions

  • Preheat oven to 170c fan-forced. Cream together butter and sugar until pale and creamy. Add bananas and eggs and mix. Add flour, baking powder and salt, fold together. Pour into a lined baking loaf pan. Bake for 50-60 mins until a skewer comes out clean.
  • Beat together cream cheese, milk, vanilla and sugar if you’re using it until completely smooth (I use a stand mixer with a paddle or bamix for best results).
  • Frost the cake once it’s completely cool and top with passionfruit.
