The other morning I was running so absurdly late for work. Like even more than usual. No surprises here really. I always think I can do more in an hour than what is actually possible. Anyway the reason I was late was because Frankie, our little adorable 3 month-old ball of fluff kitty, was refusing to come out of her hidey-hole underneath the house. Great. This was going to be fun.

We are trying to teach her to be outside on her own a little bit everyday and loves hiding in her little hole and jumping out to catch feathers, leaves and ants that come right by her! Anyway she was too playful for her own good and would not come out. Not with the lure of her glittery sequin fish, her favourite piece of grass or her big sister's 'naughty' wet food. By the time I finally captured the little escape artist, it was 8.05am. I start work at 8.15am and ok it takes me only like 5 minutes to drive there but then I have to park and if anyone knows La Trobe University, it goes for miles! So instead of skipping brekky I opened the freezer grabbed a couple of banana and oat muffins, tossed Frankie inside, picked up my bag and got my skates on.

The parking gods (yes they exist) were watching out for me this day because I managed to get an unheard of 'free' park (saving me time at the ticket machine) and I got in the door of the office at 08.15.58. Yes I am a superstar. And all thanks to the convenience of my mighty banana and oat muffins.

Banana and Oat Muffins
This is a great recipe for those morning you're on the go and don't want anything too sweet!
Ingredients
  • 3 bananas, mashed
  • 2 eggs
  • 1 tbs honey
  • 1/4 cup milk of choice
  • 1 3/4 cups wholemeal flour
  • 1/3 cup oats, rolled
  • a pinch of salt
  • 3 1/2 tsp baking powder
  • 1 tbs cinnamon
  • 1/3 cup olive oil
Instructions
Preheat oven to 180 degreesPlace all wet ingredients into a bowl and combine with an electric mixerAdd all the dry ingredients and combine with a spoon until just combined. Don't over mix it.Equally portion batter into non-stick muffins pans or you can use patty pans in the muffin pan. You can sprinkle the tops of the muffins with extra oats if you like then bake for 20-25 minutes or until a skewer comes out clean.Cool and enjoy!
