Chilli Cheese Cauli Dippers

Isaac woke up so unwell this morning. It's not really surprising because he has worked his butt off the last couple of weeks and both of us have been jetting back and forth to Sydney for work over the last fortnight. One of us was bound to get run down. He just has a cold, nothing serious. But honestly, you'd think he was dying of some horrific ailment the way he is carrying on.

Men, right?

Anyway, to help the poor baby feel better I'll be making some veggie soup or maybe even some chicken soup. That's what grandmother's around the world cook to make someone feel better anyway. Normally I would just make some cheesy herb toast to dunk into the soup. Because soup isn't a meal in my book without at least one slice of something to go with it! But a few months ago I started playing around with the cauliflower base used in pizzas a lot because I'd never really had one that took my fancy.

Finally, once I had stripped the cauli base idea right back to just two ingredients, I found the base worked perfectly! These chilli cheese cauli dippers are incredible dunked into soup, eaten on their own or even jazzed up into a pizza.

Chilli Cheese Cauli Dippers
A healthy, low-carb soup dipper that is the best sort of comfort food.
Ingredients
  • 1/2 Cauliflower, riced in food processor
  • 2 Eggs
  • 1-2 cups Cheese, mozzarella or monterey jack
  • 1 Spring onion, sliced
  • 1 tsp Chilli
Instructions
Preheat oven to 180 degrees CelsiusPlace 'riced' cauliflower and eggs into a bowl and mix really well On a baking paper lined tray, tip out mixture and press into an oval shape that is about 1cm high. Make sure you press the edges together so it's a clean shapeBake for 35 minutes or until edges are quite dark Remove from oven, and with oven mits, turn the base upside down so the baking paper is facing up. This is easy to do because the baking paper will be stuck to the baseCarefully peel baking paper away from the base, and set the base asidePlace the baking paper back onto the tray and put the base back on top with the bottom facing the top (the side the paper was stuck to)Sprinkle on your cheese, spring onions and chilli then place it into the grill until the cheese is meltedSlice and dunk!
