Chimmichurri

Over the weekend I attended a butchering class at Hagen's Organic Butcher and naturally thought about trying my hand at cooking steak, something I don't do very often. With steak, you need a finishing sauce, or at least it's nice to have one. My favourites are bearnaise, peppercorn and chimmichurri. Chimmichurri is such a fresh and zingy sauce that cuts right through the richness of steak and it's so easy to make, just pop everything into a processor!

The colour is absolutely gorgeous and the fragrance of the sauce is basically begging you to drink the entire amount right then. It is divine. 

Store the chimmichurri in an airtight container in the fridge for a week or so after making it. But it won't last that long, I've been putting it on *everything*, toast with avocado, roasted cauliflower, on homemade hamburgers!
