This salad here was the remnants of my pretty-bare fridge a while ago and since then I've never looked back! It's so summery, and light, but packed with vitamins, minerals and fibre so it'll be keeping you full and satisfied way past 3pm.
The haloumi provides a serve of dairy and good boost of protein and calcium while the tomatoes are loaded with lycopene, which is a powerful antioxidant. Add the avocado in for a dose of healthy mono- and poly-unsaturated fats and you're done! Healthy, Summery, delicious and easy. What more could you want?!
