This weekend we are jetting off to Vietnam for the first time! It will be my first proper real-deal holiday since I started my business about 18 months ago. SO overdue! Working 60 hour weeks consistently plus being really bad at sleeping when stressed (blog post coming soon on my top tips for improved sleep!) plus renovating our house plus planning our wedding has left me running on fumes. I will admit, that we planned most of our wedding in an afternoon; venue, ceremony, celebrant, flowers, cake, band and invites were all done in a matter of hours. I've become really efficient now that I've been successfully (I think?!) running my biz, no time for mucking around. Pick something, see if it's available, lock it in and move on to the next thing.
Needless to say that quick and easy dinners and side dishes like this glorious salad have been mandatory. It's even better the next day and if you don't like blue cheese, sub it out for feta! YUM! Pairs perfectly with roasted chicken or even steak. Blue cheese on steak is like next-level heaven!
