Autumn is here and these flavours are winners. My neighbour gave me a whole bag of homegrown silverbeet which is absolutely stunning. The leaves are all different sizes and a gorgeous deep forest green colour. I love it mixed up and sautéed with feta cheese, lemon juice, red onion, salt and pepper and then baked with some eggs in little nests. Maybe that can be brekky tomorrow..I feel like I will be getting verrrrry creative with silverbeet this week so it doesn't go to waste! Any ideas are so welcomed! :)

I used a cauliflower base for this recipe because during winter and the cooler months I find it a little more difficult to get my veggies in because I really only want bread, pasta, potatoes..you know, winter food. So this recipe satisfies my hankerings and recommended veggie intake all in one! It is just packed full to the brim with veggies that are full of flavour and nutrition. Pizza sure does make it easier to eat your vegetables especially when it is as good as this one!

And I really love pizza. Like love love love pizza. My dad was a pizza maker when I was little - how much more Italian can you get?! haha. I remember sitting on his bench back in the day where food safety regulations were apparently so lax that a child could sit on the ingredients bench (haha!) and watching my dad spread all the ingredients out onto the pizza base. I also remember him tossing the dough up in the air and catching it with one hand over and over to make a perfectly stretched out pizza base. Although I love traditional pizza, this one isn't made with 'real' dough, it's made from cauliflower which is surprisingly fabulous. Obviously the texture and taste are different but honestly, it is really awesome and it's full of nutrients. Cauliflower is a great source of vitamin K, B6 and C, and a good source of dietary fibre, and protein amongst a myriad of other things. Plus it's a really quick and easy option that is really great for people who are gluten-intolerant. A great option with this pizza is to sprinkle some thyme leaves over it if you have them on hand, it really makes it but still beautiful if you don't :)

Silverbeet, Fennel & Caramelised Onion Pizza
A tasty way to squeeze in your veggies!
Ingredients
  • 1/2 large cauliflower, riced in processor
  • 2 eggs
  • 1 cup fior di latte or mozzarella
  • 4 large leaves silverbeet, chopped
  • 1/2 bulb fennel, shaved
  • 1 red onion, sliced
  • 1 tbs coconut sugar
  • 1 tbs olive oil
  • 4 tbs tomato paste
Instructions
Pre heat oven to 180 degrees Celcius. Place cauliflower rice and eggs into a bowl and combine well. Divide mixture into two and press into a circle on a baking paper lined tray. Make sure you firmly press the mixture into the shape with the edges a little built up. Bake for 30-40 minutes until firm and beginning to brown.In the meantime, place onion, oil and sugar into a pan and saute on low for 20-25 minutes until caramelised, stirring often. Remove from heat and set aside.Place silverbeet into pan and saute for 5 minutes until wilted.Once pizza bases are done, carefully flip over onto the baking tray and peel the baking paper off. On the exposed side, spread out tomato paste evenly, then top with all the toppings, making sure to evenly spread them out over the two pizzas.Bake in the oven until cheese is melted. Slice and enjoy!
