Buttery Banana Bread with Passionfruit Cream Cheese Frosting

Ingredients

  • 120 g butter softened
  • 170 g brown sugar
  • 4 medium or 5 small bananas mashed
  • 2 eggs beaten
  • 225 g plain flour
  • 1 tsp baking powder
  • Big pinch of sea salt flakes
  • 250 g cream cheese room temperature
  • 1/3 cup milk
  • 1 tsp vanilla
  • Icing sugar to taste optional
  • 2 passionfruit

Instructions

  1. Preheat oven to 170c fan-forced. Cream together butter and sugar until pale and creamy. Add bananas and eggs and mix. Add flour, baking powder and salt, fold together. Pour into a lined baking loaf pan. Bake for 50-60 mins until a skewer comes out clean.
  2. Beat together cream cheese, milk, vanilla and sugar if you’re using it until completely smooth (I use a stand mixer with a paddle or bamix for best results).
  3. Frost the cake once it’s completely cool and top with passionfruit.
