I thought I'd best put the recipe for this delicious morsels here so you guys can always refer back to it for Christmases to come!
To begin with, make your gingerbread spice by combining the following in a jar (great for gifting too!:
2 tsp cinnamon
2 tsp allspice
2 tsp ground cloves
2 tsp ground nutmeg
4 tsp ground ginger
1 tsp ground cardamom
1 tsp ground coriander
1 tsp vanilla powder (optional)
For the cupcakes, you will need:
2 cups self-raising spelt flour
3/4 cup coconut sugar
2 eggs, beaten
3/4 cup milk of choice
125g butter, melted, cooled
1 teaspoon vanilla extract
1 generous tbs gingerbread spice (the one you've just made!)
Preheat oven to 180 degrees. Combine all wet ingredients in a bowl with a spoon, add dry ingredients and combine again. Place spoonfuls of batter into patty pan casings in a cupcake pan until 3/4 full. Bake 12 or so minutes (may vary depending on the size of your cupcakes) or until a skewer comes out clean. Cool completely and frost with this frosting recipe here, being sure to add extra vanilla to it (1 tbs), and sprinkle with broken gingerbread cookies if you have some!
