Mexican Chocolate Popcorn

It's Saturday here which normally means MOVIE NIGHT! Last week we saw 'Spotlight' which was absolutely brilliant. A fantastic film. I'd highly recommend it to anyone. This week maybe 'Brooklyn' or even 'Concussion', I've heard both are fabulous.

When I go to the movies I pack my own popcorn. Not because I don't like the movie popcorn, I do but I am actually allergic to one of the colourings in the butter flavouring. I can only order it if I go to Westgarth Cinemas who make their own popcorn with olive oil and sea salt. So good but sometimes I like a change! So a couple of weeks ago I was watching 'Chocolat' at home while Isaac was unwell and asleep. One of the characters in the film loved the spicy chocolate.

And I remembered from years ago, that I love chilli chocolate too. A family friend used to make these AMAZING chilli chocolate chip cookies that were to die for and had the most beautiful peppery warmth to them. And I guess all of that was my inspiration for this delicious and easy Mexican chocolate popcorn!

Mexican Chocolate Popcorn
A spicy and warming alternative to regular butter popcorn!
Ingredients
  • 8 cups, popped Popcorn
  • 4 tbs Maple syrup
  • 1/2 tsp Salt
  • 4 tbs Coconut oil
  • 4 tbs Cacao powder
  • 1 tsp Cinnamon
  • 1/4 tsp Cayenne Pepper
  • 1/2 tsp Ginger, ground
Instructions
Pre-heat oven to 180 degrees CelciusInto a small saucepan on low heat, place all ingredients except for the popcornUse a whisk to stir the ingredients until melted and well combined. Remove from heatIn a big bowl, place popcorn and pour over the chocolate mixture. Combine really well (stir for at least two minutes)Spread equal amounts of the coated popcorn onto baking trays lined with baking paper. Make sure it is only an even single layerBake in the oven for 5 minutes. Then mix around and spread out a thin layer again and bake for another 3 minutes. Do this process for another 2 times at 3 minutes each until the popcorn is dry.Cool completely then enjoy!
