This raw vegan frosting is such a gorgeous alternative to traditional buttercream frosting and I'd say it's probably way easier to make as well! You can play around the with flavours too, add some cacao, or peppermint essence or even some almond extract. You could also add food colouring if you wanted to create a particular look!
Raw Vegan Buttercream Frosting
A great dairy-free alternative that is still fluffy and delicious.
Ingredients
- slightly heaped 3/4 cup raw cashews
- 1/4 cup coconut oil, melted
- 2 tbs maple syrup
- 3 tbs water
- a pinch of sea salt
- 1 tbs vanilla bean paste or extract
- 1 tsp apple cider or white vinegar
Instructions
Place everything into a blender and process until completely smooth. Place into the freezer for 30 minutes then transfer the mixture into a stand mixer fitted with a whisk attachment and whisk for 7-8 minutes, scraping the sides and bottom every 2-3 minutes. Spoon whipped mixture into a piping bag with your choice of nozzle and frost away!
