Finally I am sharing my absolute ultimate favourite classic lasagne recipe that I have made millions (…well maybe not quite millions!) of times! It’s seriously delicious.

Chilli Cherry Tomato Pasta

Earlier this year I was lucky enough to travel to Italy with my Bertolli family. We stayed in the most incredible villa nestled amongst olive groves in the hills of Tuscany, just outside of Lucca. I had always heard about Lucca as being a magical place to visit, as the city is completely surrounded by walls, but had never managed to get there during my other trips within Italy.

It's Carbonara Day today and to celebrate I'm sharing my version of the quintessential Italian dish. There are only a handful of ingredients, and absolutely NO cream allowed. This is the real deal people. No shortcuts, and no weird additions.

Pasta World Championships

For those of you who follow me on Instagram would know that recently I spent a week in Italy with Barilla for the 6th Annual Pasta World Championships! Needless to say, it was AMAZING! It wasn't what I expected at all, it was so much bigger, better and just 'more' of everything. 

Creamy Pumpkin, Caramelised Onion & Pine Nut Pasta Bake

I've said it before and I'll say it again, nothing beats pasta! I eat it twice a week at least and swear I have spaghetti (no.3 spaghettini to be exact) running through my veins! This creamy pumpkin, caramelised onion and pine nut pasta bake is the bee's knees and really easy to throw together. The sauce is jam-packed with flavour and only has a handful of ingredients. You could even use the sauce as a bruschetta topping or pizza base! 

Baked Spinach & Ricotta Pasta Shells

This is an easy recipe I make all the time which always leaves leftovers for lunch the next day (even better) and smells amazing wafting through the house! I like to really pack my shells with ricotta and spinach because I love the texture and it ups the protein, calcium and iron of the dish.

I grew up eating pasta, a couple times a week - no less. my mum, and nonna have always made pasta sauce from scratch and in huge variety. bolognese, amatriciana, arrabiata, napoletana (also known as 'stupid sauce' in my family because it's so easy it's stupid), carbonara (the real way, none of this cream business), formaggio e burro, the list goes on!
