The Cheat's Way to Entertain this Festive Season
I feel like we saw the first glimpses of Summer this week, which is super exciting for those of us in Melbourne. This year so far has basically been like Game of Thrones and Melbourne has been at ‘The Wall’ the entire time freezing their butts off in the blistering cold, while every other state has enjoyed the offerings of all the other seasons!
Anywho, Summer is finally on its way in which means lots of Christmas parties, BBQs with friends, New Year’s Eve, beach holidays and work functions, which is why the festive season is my favourite time of the year! I will admit though, that in amongst everything else going in December like finalising projects, working towards strict deadlines, and trying to get my Christmas shopping done, I’m all out of time! I think this is the case for most people especially if they’ve got kids finishing up at school, carols by candlelight nights at school, Christmas concerts and squeezing in time to see the neighbourhood Christmas lights.
Thankfully there are some healthy, convenient options available that mean you can whip up an amazing salad for that function or have a wholesome family dinner done in jiffy. My friends over at David Jones have launched a brand new range of freshly prepared fruits, vegetables and salads to help all us time-poor food lovers out! They have all the basics like kipfler potatoes with garlic and herb butter, Greek salad, butternut pumpkin cubes, and a green vegetable medley with mint and chive butter plus some new trendy veggies like zucchini noodles and cauliflower rice, and they’ve even got stir-fry combinations, different types of slaws you can put together and fresh dressings to top everything off with. It’s fabulous having vegetables all ready to go, but David Jones’ have taken convenience one step further! To cook everything in the new range, all you have to do is pop the bag into the microwave and voila! Fresh, tasty, healthy salads, sides and veggies done in under 7 minutes!
So to celebrate this, I’m sharing a super easy salad recipe in partnership with David Jones that is packed with flavour and the festive colours! It takes no time at all to throw together and is even better the next day once all the dressings and fruit juice have developed overnight. You can customise it completely as well, if you don’t have almonds on hand, just replace with any nut or seed you have left in your pantry and if you don’t have apples, then just use pears! Easy!
- 1 packet David Jones Zucchini Noodles
- 1 packet David Jones Kale, chopped finely if you have the time
- 1 jar David Jones Balsamic Dressing
- Jewels from one pomegranate or a little container of pomegranate jewels which are occasionally available in the fruit section at David Jones
- 1 120g packet slivered almonds, toasted in a pan for 5 minutes
- 1 apple, grated
