Vanilla Roasted Macadamia Butter
I accidentally poured (very) roasted macadamias (because I nearly forgot about them in the oven..) into my Vitamix the other day instead of peanuts to make my usual batch of salty, yummy nut butter. I'd say I was definitely away with the fairies at that moment. I only realised what I had done once I opened the lid and saw a slightly paler and creamier butter staring up at me from the base of the jug.
No matter though because it is so creamy, and buttery, finger-licken goooooooood. I added my usual bit of salt and some vanilla bean paste because I think vanilla and macadamias are a match made in subtle flavour heaven. I also added 1/4 peanuts to thicken up the texture to my preference but that's optional :) I made it again and it was confirmed - buttery and delicious!
I added a dollop to my porridge and wondered why I didn't make this sooner. This afternoon I experimented with making some 'white chocolate' with it too and it was divine! I'll pop that recipe onto the blog tomorrow because you need it in your life.
- 2 cups roasted macadamias
- 1/2 tsp salt
- 1 tsp vanilla bean extract/paste
- 1/4 cup peanuts (optional)
