Strawberry & Cream Chocolate Bites

Strawberries and cream are such a dream. I love dunking fresh and fragrant strawberries through a big pool of just-whipped vanilla cream. And I wanted to translate these flavours over into a plant-based version so everyone could experience the yumminess!

I used cacao butter for the white chocolate base and you can sweeten it with powdered sugar if you like. I prefer it without the sweetness but everyone I taste-tested them on have a sweeter tooth than me and they liked them with 3 tablespoons of powdered sugar dissolved into the cacao butter. You can use powdered coconut sugar if you like, just blitz up your coconut sugar in a vitamix or processor until super fine, like powder.

For my strawberry chia jam I use 1 punnet of pureed strawberries heated on the stove with 1/3 cup rice malt syrup for 5 minutes then taken off the heat and 3 tablespoons of chia seeds mixed through. Leave for 10 minutes for chia seeds to soften and then it's good to go! Alternatively, you can use regular jam.

Strawberries and Cream Chocolate Bites
A vegan version of everyone's favourite combo!
  • 1/2 cup cacao butter, melted
  • 2 tbs Vanilla Roasted Macadamia Butter (see link above)
  • 3-4 tbs powdered sugar
  • 1/3 cup strawberry chia jam (see above)
Place melted cacao butter, Vanilla Roasted Macadamia Butter and powdered sugar together in a bowl and combine well. Pour mixture through a fine sieve to make sure any lumpy bits are left outHalf fill a silicone chocolate mould with cacao butter mixture and place into the fridge for 10 minutesOnce set, spoon a small amount of chia jam into the moulds then fill to the top with cacao butter mixturePlace into the fridge until set and enjoy!
