My not-so-secret ingredient to give you that crispy crunch is super fine polenta! If you can't get a hold of this, you could use semolina or even a mix of the two!

Bake for a good 55-60 minutes and voila! The best ever, most delicious, healthy and wholesome, crispy sweet potato fries!

Best-Ever Sweet Potato Fries

Ingredients
  • 1 large sweet potato, skin on and cut into thin long matchsticks
  • 1 tsp garlic powder
  • 2 heaped tbs superfine polenta
  • 2 tbs extra virgin olive oil
  • 1 tsp sea salt
  • 1 tsp smoked paprika
Instructions
Preheat oven to 180 degrees Celsius. Place all ingredients onto a baking paper lined tray and toss sweet potato through the spices and oil until they are coated. Spread out sweet potato so they are in a single layer, separating onto two baking trays if need be. Bake for 55-60 minutes until crispy and browning in colour.
