Crispy Baked Cauliflower

Well Winter is well and truly here in Melbourne. We had held onto Summer for so long this year, May was so warm. Now, that is cold, my Winter stomach has been gumbling along. You know the extra stomach you grow in the cold weather? Always hungry? That's me to a tee. I definitely eat more during the colder months but that doesn't mean I can't maintain a healthy diet, and my weight. 

Healthy spiced cauliflower

This recipe is the perfect cool-weather comforter that is satisfying and filling. The warming and smoky spices give this recipe a really hearty edge, and the healthy fats from the extra virgin olive oil make it feel heavier and kind of indulgent...but obviously it's not! It's wonderfully nourishing and tastes beautiful. And that's all I really want when I crave comfort food.

Crispy Baked Cauliflower
A healthier version of fried cauliflower
Ingredients
  • 1 cauliflower, cut into florets
  • 1/3 cup extra virgin olive oil
  • 1 tbs ground coriander
  • 1/2 tbs ground cumin
  • 1 tbs smoked paprika
  • 1/4 tsp mixed spice
  • a pinch of salt and pepper
Instructions
Place florets into a bowl and pour over olive oilIn another bowl, combine all the spices together wellSprinkle them over the top of the cauliflower and olive oil. Mix wellPlace the coated florets onto a baking paper lined tray and bake in a pre-heated oven for 1 hour on 170 degrees Celsius
