Avocados have been pretty expensive lately so I started playing around with my regular healthy chocolate mousse recipe so I could still get my chocolate fix without paying an arm and a leg.
I love sweet potato in sweets, it's such a gorgeous texture, mild flavour and pairs so well with cacao. I've got a batch of sweet potato brownies in the oven as I type this too so keep your eyes peeled for that recipe!
- 1 1/2 cups sweet potato, skin off cooked and mashed
- 1/2 cup cacao powder or more if you like it darker
- maple syrup to taste
- a pinch of salt
- 1/2 - 3/4 cup vanilla or plain almond milk
