This week I've got a super cosy and warming recipe for you guys which tastes SO much better than a packaged pre-mix and is seriously just as easy! Who knew Beef Stroganoff had just a handful of ingredients?! I'm using greek yoghurt instead of the traditional cream or sour cream to bring down the saturated fat content while still keeping that slightly tart flavour that cuts through the richness of the dish. You can make this recipe in a slow cooker (high for 4 hours or low for 8 hours) or pressure cooker (about an hour) but just remember to brown your beef first, that's where all the flavour is!
If you slow or pressure cook, I highly recommend using beef cheeks as they break down and pull apart and are packed with flavour. You could also use a tender cut of steak if you can't get chuck, because the cooking time is short, try to get as tender a cut as you can.
