It's back to school on Monday and I've have seen a whole bunch of mums and students tagging me in their recreations of my old-school zucchini slice this week. Anyway you guys inspired me to make one myself but didn't have time/really couldn't be bothered going to the shops to get the ingredients I didn't have. So I've whipped up this new and improved Zucchini, Kale & Haloumi Slice instead and it's so so delicious!
The haloumi and eggs provide protein and calcium while the zucchini and kale provide niacin, folate and an array of B vitamins plus a whole bunch of fibre! Plus there's only 7 ingredients!
