Healthy Blender Pancakes

Yep that's right! Pancake Sunday just became that much easier! Healthy blender pancakes for the win this coming Easter weekend. After all we all need something healthy to balance out the chocolate right?! 

Ingredients

1 large banana, peeled

3 eggs

1 cup rolled oats

1 tsp baking powder

1 tsp cinnamon

Method

Place everything into a blender and process until combined well.

Pour batter straight from the blender jug into a non-stick pan.

Cook for 3-4 minutes on medium heat until bubbles begin appearing on the pancakes, then flip and cook for a further 2 minutes.

Repeat until batter is finished then top with fresh fruit, yoghurt or a little maple syrup.
