Hot Cross Duffins
My local cafe bakes a dozen fresh muffins from scratch everyday single morning. sometimes there's apple and cinnamon, mixed berry, lemon curd, vanilla cream..and then last week they had hot jam duffins. I did a bit of a double take and then immediately ordered one because my sweet tooth nearly popped out of my jaw and onto the bench to get to this glorious mountain of cinnamon coated goodness with the perfect ooze of jam escaping from the top.
anyway i figured i'd give it a go in time for easter because i feel like hot cross buns have been done about 47000 times and i'm going through a doughnut phase right now.
also, still not sure about the word 'duffin'.
Hot Cross Duffins
Ingredients
Cups of spelt flour
4 tsp baking powder
1 egg. lightly beaten
2/3 cup buttermilk
3 tbs cinnamon
1 tbs mixed spice
1/2 cup mixed fruit and peel
1/3 cup olive oil
2/3 cup rapadura sugar
Pinch of salt
1 tsp vanilla powder or extract
Method
Preheat oven to 180 degrees celcius
Place all the dry ingredients into a bowl
Make a well in the centre and add in all the wet ingredients
Spoon mixture equally into 6 well-greased muffin holes
Bake for 20 mins
Don't bother letting it cool, bust one open, scrape on some butter and enjoy!
I just 'crossed' the duffins with a mix of icing sugar, coconut flour and water but this is not at all necessary and really was too fiddly. They are beautiful all on their own :)
