Matcha Cupcakes
My friend sarah (@foodies_digest) recently went to japan on a skiing trip and to spend some time in tokyo. it looked like an amazing time and like the most perfect winter wonderland. and to top it off, she could get beer from a vending machine for $1. winning big time if you ask me.
anyway, she bought me back the cutest little gifts including a wooden kitty spoon, a gorgeous fabric print, and some matcha green tea powder! it is actually the greenest substance i've ever seen and i had heard it was pretty potent so you didn't need much, which i can now confirm is true. a little goes a long way.
i wanted to make a matcha pound cake but really didn't want to wait the 90 or so minutes that pound cakes take to bake so i made matcha cupcakes instead! my stomach usually leads the way in these decisions.
Matcha Cupcakes
ingredients
2 1/2 cups wholemeal plain flour
4 tsp baking powder
1 cup rapadura sugar
200g butter, room temp
3 tsp matcha green tea powder
3 eggs
3/4 cup milk of choice
Method
Cream butter and sugar together with an electric mixer until paler than when you first began (rapadura sugar is dark so it won't go pale and creamy but more like a latte colour)
Add in the eggs and beat for a minute
Add in the matcha powder, baking powder, and half of the flour
Combine then add in the rest of the flour and the milk
Combine well and fill patty pans 2/3 full so they don't explode
Bake for 15 mins on 160 degrees celcius or until a skewer comes out clean
Cool and top with frosting, cream, or yoghurt - whatever you like!
