This week I’m sharing my recipe for the perfect dessert this festive season – easy and delicious individual vanilla bean and mango pavlovas with macadamias. They are so simple to put together and, in this recipe, I’ll show you my method for only using two ingredients, egg whites and sugar, to make the best meringue.

Fig and Hazelnut Cake

Lime & Mango Slice

I've always been one to pick zesty flavours over caramel/chocolate flavours because I find them super flavoursome and generally not as sweet. I always love enjoying a raw slice but they always have dates in them but I am actually sorbitol-intolerant and dates have a pretty large chunk of sorbitol in them. So to save looking 6 months pregnant after a coffee and cake date, I always end up going to something else.

Carrot Cake

On the weekend I asked my mum and dad to take me to the snow for my birthday. Even though it's not until next week it was the only day everyone could line up to be free. It's so funny how hard it is to organise 6 people when they all have different lines of work or study. So after I organised what seemed like a military-like operation to get the fam together, and we headed off to Lake Mountain near Marysville in Victoria. It's not very far from the city at all really, barely 2 hours. We got our snow gear and toboggans - the super quick 'carve' toboggans no less and parked the car.
