The last couple of years i have coincidentally made isaac middle-eastern inspired cakes, and i did it again this year. i made orange blossom and cardamom cake with yoghurt and honey icing aka 'ugh! it tastes like morning fresh detergent' according to isaac's bro.
orange blossom is certainly different to flavours that we in australia are used to unless we are lucky enough to have exotic heritage. it doesn't taste anything like orange, kinda like flowers really. it's a really fresh flavour i think.
god, i'm not really selling it am i?
it's fab i promise! if you don't like orange blossom, sub in rose water or just leave it out, still lovely <3
the yoghurt on top with honey is a lovely sweet/sour contrast and goes so well with orange blossom and cardamom. give it a go, it's dead easy as usual because i'm a pretty lazy cook ha! let me know how it goes, if you think it tastes like dishwashing liquid, let me know! my bro-in-law will be so pleased that he isn't the only who thinks it does :P
FYI: I adapted this recipe from a basic butter cake recipe i found on a piece of paper in my nan's draw at her house
Orange Blossom and Cardamom Cake
200g butter, room temp.
1 cup rapadura sugar
2 cups wholemeal flour
4 tsp baking powder
1/2 cup buttermilk or milk if you don't have it
3 tsp orange blossom water
2-3 tsp ground cardamom, add 3 if you love it! i do!
1 cup full-fat greek yoghurt
2-3 tbs honey
Preheat oven to 160 degrees celcius
Cream butter and sugar (won't be super pale because it's not white sugar) in a bowl with electric beaters
Add in the eggs, and beat for 30 seconds
Add the milk, and orange blossom, beat another 30 seconds
Add in the flour, baking powder, and cardamom
Combine with a spoon
Spoon the batter into a lined cake tin and bake for 55 mins or until a skewer comes out clean Cool completely and 'ice' with the yoghurt
Drizzle the honey over it
Decorate with your favourite nuts, fruit, or seeds and enjoy!
