There’s been so much going on at our house lately. Finally a year and a bit after we began the structural work on the house, we have been able to start renovating the inside and building a whole new kitchen! It’s been so chaotic but now that it’s coming together and we can see the results of our hard work (and that of our dads!) it’s so worth it.
I got my brand spanking new fancy oven wired in on the weekend and roasted up some gorgeous heirloom carrots I picked up at the market. I sliced them lengthways, then halved them and tossed them in extra virgin olive oil, a little honey and sumac and roasted them until soft and caramelised. They were incredible and it was so nice to cook something in an oven with a light!
I know this salad will be on repeat for us to serve with barbecues or even a Sunday roast chicken. SO scrumptious and so super simple.
