Eggplant parmigiana is one of my favourite tray bakes. It’s so easy, delicious and uses only a handful of ingredients! Layers of grilled eggplant with rich herbed tomato sauce and a crunchy, crispy, oozy breadcrumb and mozzarella top. Seriously so delicious!

It's Carbonara Day today and to celebrate I'm sharing my version of the quintessential Italian dish. There are only a handful of ingredients, and absolutely NO cream allowed. This is the real deal people. No shortcuts, and no weird additions.

Chickpea Cacciatore with Soft Polenta

What a week! I've barely cooked. Renovations are tiring! I didn't realise this for so long but this week I started to 'itch'. I wanted in on my hazard zone of a kitchen! The biggest part of the reno is almost finished so I got into my kitchen this afternoon to whip up this hearty, healthy and oh-so-satisfying chickpea cacciatore with super soft polenta.

It's no lie that I love pizza. My Dad was a pizza maker when I was little plus we are Italian so it seems my love of it could be genetic! And not crappy cheap pizza, I mean l love a good, thin, crisp dough with only a handful of toppings and cooked in a wood fire. 

Supergreens Pesto

This supergreens pesto is so so easy to whip up at a moment's notice to use a pasta sauce, which I actually do all the time because it's a cheap, nutritious and fast meal that is super tasty! Or as a sandwich spread, an awesome addition to quiches, frittatas and scrambled eggs, as a topping for pizza or even a dipping sauce for sweet potato chips! The list goes on!
