I first tasted real alfajores while holidaying through Spain and Portugal last year. Even though I’d made alfajores before, these were different. They had some spice to them, and upon asking the bakery I found them at, pisco and cinnamon in the cookie dough. These alfajores were the best I’d ever tasted.
Whenever we have dinner parties, this is the cake Isaac makes. It’s his specialty and he has been perfecting it for a few years now since finding a very basic baked cheesecake recipe in an old magazine that he ripped out and stuck into his own personal cookbook that now has alterations and changes and scribbles all over it.
This is a winner of a cake. Like an absolute, total, hands-down winner. A few ingredients, loads of healthy olive oil, magnesium-rich cacao and heaven in a mouthful! After visiting the olive groves at Cobram Estate last week I really wanted to try out an icing similar to one that the chef made for our carrot cake. I've always loved chocolate and olive oil together so it seemed fitting that I'd use it instead of water to make it!
Did someone say figs?! Haha you guys know they're my favourite! Especially in this almost-savoury cake. It's the kind of cake you can have a slice of with an espresso for breakfast (Italian-style) or for a mid-afternoon snack and not feel heavy or sick.
I've had a craving for something sweet and chewy and chocolately this week. And this Caramel Nut Slice with Chocolate on top really hit the spot. It was done in minutes and is now all neatly sliced up and in my fridge. I had two pieces the day I made it because, even though one would have been enough, I sliced my finger open cutting the slice up because I'm left-handed and a clutz! Now I can constantly feel my heartbeat pounding in my pinky finger tip haha!
There are no words to describe how bloody good these raw chai bars are. Spicy, warming, sweet, slightly bitter, all combined to form complete and utter deliciousness.
