In this recipe, we’ll guide you through creating a delightful pasta sauce using only a handful of ingredients. This easy-to-make sauce features the bold flavours of cherry tomatoes, garlic, and parsley, enhanced by the richness of olive oil and dry white wine. Let’s dive into this mouthwatering pasta sauce recipe.


You need:

Step 1: Prep the Ingredients. Start by washing the cherry tomatoes thoroughly and patting them dry. Peel and finely chop (or mince) the garlic cloves. Gather the remaining ingredients: extra virgin olive oil, dry white wine, finely chopped continental parsley, and sea salt flakes.


Step 2: Heat the extra virgin olive oil over low-medium heat. Add the cherry tomatoes and sauté for 4-5 minutes.


Step 3: Add the garlic to the saucepan. Let them cook for about 2-3 minutes, allowing the tomatoes to soften and release their juices and the garlic to become tender. Stir occasionally to prevent sticking.


Step 4: Pour the dry white wine into the saucepan, and stir gently to incorporate it with the tomatoes and garlic. Allow the mixture to simmer for another 3-4 minutes, allowing the alcohol to cook off and the flavours to meld together.


Step 5: Sprinkle the finely chopped continental parsley over the sauce, and stir to combine. Next, add the sea salt flakes, adjusting the amount to suit your taste preferences. Continue cooking the sauce for an additional 2 minutes, stirring occasionally.


Step 6: Once the sauce has thickened slightly and the flavours have melded together beautifully, remove the saucepan from the heat. Your easy homemade pasta sauce is now ready to be tossed with your favourite pasta. Serve it hot, garnished with a sprinkle of additional parsley if desired.

Ingredients

  • 1/2 cup olive oil extra virgin
  • 300 grams cherry tomatoes
  • 6 cloves garlic peeled and chopped
  • 1/3 cup dry white wine
  • handful continental parsley finely chopped
  • 2 teaspoons sea salt flakes

Instructions

  • Add the olive oil to a medium frypan and bring to a medium heat.

  • To the olive oil add the cherry tomatoes, heating gently. Next add the garlic and and sea salt. Stir and fry until fragrant.
    300 grams cherry tomatoes, 6 cloves garlic, 2 teaspoons sea salt flakes
  • Pour in the white wine and add the chopped parsley. Stir to combine while gently breaking up the cherry tomatoes with the back of the spoon.

  • Simmer to thicken slightly before serving over the top of your favourite pasta.

Storage

If not eating straight away, store in the fridge in a sealed jar or airtight container for up to 4 days.
