Simple Focaccia
A simple recipe that is a total crowd pleaser!
  • 3 1/3 cups '00' flour (best) or plain spelt flour
  • 1 tbs coconut sugar
  • 1 tsp salt
  • 2 tbs extra virgin olive oil
  • 2 1/2 level tsp dried yeast
  • 2 cups warm water
Place water, oil, sugar, salt, and yeast into a stand mixer fitted with a dough hook. Knead for 5 minutes until the yeast has dissolved.Add flour and knead for 15 minutes. The dough will be quite runny after this time. Pour into an oiled bowl and cover for one hour or until doubled in size.Preheat oven to 200 degrees Celsius. Lightly grease a brownie pan or any pan (round, square) that has a lip on it. Ideally 30cm x 20cm x 3cm. If your pan is a different shape, you may need to cook it a little less or a little more. Top with extra olive oil and salt and any toppings you prefer then bake for 45-50 minutes until risen and golden brown. Cool slightly then slice and serve.
