Easy Granola
I am a firm believer that there is no better way to clear out my cupboards than by making a batch of granola. i just go through all my little bags and jars and tip whatever i've got left into a big bowl until i'm sufficiently happy that i've cleared out all the little, annoying leftovers. this time though, i actually measured everything so i could tell you about it!
the best part about this easy granola is that every batch is different depending on what you have in your pantry. and that you have a super empty cupboard at the end. and that you have a huge breakfast cereal stockpile at the end..ok so there's actually lots of best parts.
the best treat is eating this hot out the oven with milk, yoghurt, and fruit, all washed down with a steaming cup of coffee.
Easy Granola
ingredients
2 cups rolled oats
2 cups puffed rice
1 cup olive oil
1/2 cup rice malt syrup or sweetener of choice
1 cup desiccated coconut
2 1/2 cups mixed nuts/seeds (whatever you have in the cupboard)
1/2 cup dried fruit (whatever you have in the cupboard)
2 tbs cinnamon or cacao depending on your flavour preference - both are delish!
Method
Chuck everything into a bowl, and combine well
Place half the mixture into a baking tin lined with baking paper
Bake on 180 degrees celcius until golden brown (usually takes about 30-40 mins for me, because my baking tin is small)
Repeat with the rest of the mixture
Cool and store in an airtight container to enjoy!
Makes about 9 cups of granola
