Orange & Vanilla Black Rice Pudding
This is a recipe I've been making for ages so I thought I'd share it with you all seeing as it's so cold and dreary today! This black rice pudding warms you up right down to your toes and is much lighter than the traditional recipes or store-bought versions.
The black rice is stunningly chewy and flavoursome, and well worth trying to source. You can get a variety of it at Coles I think. It's slowly simmered until tender with vanilla bean, orange zest, splash of juice with some creamy almond milk.
You can serve it warm from the stove or cooled in the fridge. Either way, this black rice pudding is divine.
Don't forget, to add extra milk once it's cooked to thin it out if you'd like it more soupy, I love it with lots of extra milk!
Orange & Vanilla Black Rice Pudding
Beautiful for dessert or breakfast!
Ingredients
- 2 cups black rice
- 4 cups almond milk
- juice of one orange
- zest of one orange
- 2 tsp vanilla bean paste
- a sprinkle of coconut sugar, to taste
Instructions
Place all ingredients into a saucepan and simmer on low with the lid on, stirring every few minutes, for 35-40 minutes until the rice is tender.Serve with natural yoghurt and fresh blueberries and enjoy!
