It's August already! Where has the time gone?! It's been six weeks since moving house now, and we are hopefully inching closer to finding our own little house but for now, Isaac, Frankie and I are living with Isaac's parents. Frankie is so brave with their dog, Harper, a labradoodle. I hope they become best friends soon because it'd be so cute and it would make my life easier not having to monitor them together all the time!

Hi-Fibre Seed & Oat Loaf
A great alternative to traditional bread
Ingredients
  • 2 cups sunflower seeds
  • 3 cups rolled oats
  • 1 cup nuts of choice
  • 1 cup linseeds
  • 1/4 cup chia seeds
  • 8 tbs psyllium husks
  • 1 tbs salt
  • 1/2 cup coconut oil
  • 3 cups water
  • 1 tbs fenugreek
  • 2 tbs honey or maple syrup
  • 1 tbs caraway seeds
  • 2 tsp cumin
Instructions
Place all ingredients into a large bowl and combine very well. Spoon into a baking paper lined large loaf tin or bread tin and press down firmly so the top is smooth. Set aside on the bench for at least one hour. Preheat oven to 180 degrees Celsius. Bake loaf for 40 minutes. Remove from oven, turn out of loaf tin upside down onto a baking tray and remove baking paper. Bake for a further 40 minutes. Cool completely (important!) then slice and enjoy.
