Raspberry, Pepita & Black Sesame Granola
If moving has taught me anything, it's to have your pantry organised! I had NO idea how many double-ups and bits and pieces were in my cupboards. I will say this in my defence though, the cupboards were small so I had tubs that I would put everything into and some of the ingredient bags fell out the back of the tubs and were nearly lost forever...or at least until I had to pack everything! So I decided to get my stuff sorted and went out to invest in some really rock-solid glass jars with an airtight clip lid. I got a few different sizes and started pouring all my ingredients into them, within half an hour, I realised I had no where near enough jars so I went back to the shop for more. This happened four times.
Lots of bulk ingredients, spices and herbs - that's what you get when you make everything pretty much from scratch!
Now that it's all sorted out and lovely, I thought what better way to start getting through my overstocked pantry than to make granola!
This one is my favourite recipes because it's almost savoury. I love adding sweetness to my breakfasts with fresh fruit or warm berries rather than with a sugar-laden muesli so this is perfect for that! Once you've made a big batch, store it in an airtight container so it stays nice and crisp!
- 3 cups puffed quinoa
- 1 cup pepitas
- 1 cup nuts of choice, chopped
- 1 heaped cup dried raspberries
- 3/4 cup black sesame seeds
- 1/2 cup flaxseeds
- 1/4 cup coconut oil
- 1/2 cup rice malt syrup
