Firstly, I am SO sorry this post is so late! So much has been going on in the past 10 days.
Anyway finally with a tiny bit of spare time I can pop these chewy morsels of snacking heaven here for you guys. You will LOVE these! They are dead-easy to make, only have 7 ingredients, naturally sweetened with beautiful fresh honey and packed with loads of slow-burning energy from the oats. Plus you can make them into any flavour you like!
If you don't have blueberries, no problemo! Try cranberries, mulberries, or just good ol' sultanas or raisins. Chopped dates or dried apple and mango would be great too. I reckon choc chips would be amazing with dried cherries too!
Store these guys in the fridge wrapped in a little baking paper so you can pop them into lunch boxes and work bags.
- 5 cups rolled oats
- 1 cup roasted almonds, roughly chopped
- 2/3 cup raw honey
- 1/2 cup butter
- 1 tsp vanilla bean paste or extract
- big pinch of salt
- 1 cup dried blueberries
