Salted Coconut Bars

I'm not going to lie, I have eaten SO many of these salted coconut bars lately. It's like heaven in a bite. They are just like healthy bounty bars but ten times better if you ask me. The coconut filling actually tastes like a coconut pudding with lots of texture and a subtle sweetness.

I dunk mine into 85% dark chocolate because truth be told, I don't love raw chocolate. It melts too easily meaning I can't take it to work or anywhere with me without it melting into a heap. It also just tastes like coconut oil to me most of the time, it is lovely when made with cacao butter but I just genuinely get more satisfaction from eating traditional dark chocolate that is crisp and tempered when you bite into it. I like the crunch!

These gorgeous bars store perfectly in the fridge or freezer and won't melt in your lunch bag. Plus they're easy peasy to make. It's just that you have to try your best to stop at one!

Salted Coconut Bars
Like a Bounty bar but so much better!
Ingredients
  • 2 cups desiccated coconut
  • 270 mL coconut cream
  • 1/4 cup coconut oil, melted
  • 1 heaped tbs vanilla bean paste or extract
  • 1 tbs honey or rice malt syrup
  • 300g 85% dark chocolate
  • 1 tsp salt
Instructions
Place all ingredients except for chocolate into a bowl and combine very wellPress mixture into a baking paper lined brownie tin until even and very firmly pressed inPlace into the freezer for 20 minutes. In the meantime, place a saucepan of water on medium heat with a metal bowl over it, making sure the water doesn't touch the bowlPlace chocolate into the bowl, stirring until all melted. Remove from heat just as the last piece melts and continue stirring for a couple of minutes to cool the chocolateRemove the coconut mixture from the freezer and slice into equal portionsCarefully dip into the chocolate using two forks. Place each piece onto a baking paper lined tray until all bars are chocolate coated. Sprinkle with extra sea salt if you like (it's a great idea!) and place into the fridge until set. Enjoy!
