This is a winner of a cake. Like an absolute, total, hands-down winner. A few ingredients, loads of healthy olive oil, magnesium-rich cacao and heaven in a mouthful! After visiting the olive groves at Cobram Estate last week I really wanted to try out an icing similar to one that the chef made for our carrot cake. I've always loved chocolate and olive oil together so it seemed fitting that I'd use it instead of water to make it!
This week really let me know Winter was coming. Thunderstorms, super freezing winds, end of day light savings and very cold temperatures. All of that with NO HEATING. Not that I'm complaining, I've always opted for putting on a jumper (or my dressing gown in the day time!) before putting the heater on but, it's so so so cold in the mornings and in the evenings.
Guys! If you make just one thing this week/month/year, make it this three-ingredient chocolate mousse! Seriously it's the BEST EVER. And it's completely plant-based. The texture of this mousse is out-of-this-world and is just as though you've made it with cream! Sweeten your mousse up with maple, let it set cold in the fridge and enjoy! I love topping mine with fresh raspberries or even some nuts.
I've had a craving for something sweet and chewy and chocolately this week. And this Caramel Nut Slice with Chocolate on top really hit the spot. It was done in minutes and is now all neatly sliced up and in my fridge. I had two pieces the day I made it because, even though one would have been enough, I sliced my finger open cutting the slice up because I'm left-handed and a clutz! Now I can constantly feel my heartbeat pounding in my pinky finger tip haha!
In case you needed any extra help getting through this crabby Melbourne week, I've got you sorted with these incredible chocolate fudge zucchini brownies. They are ridiculously good and fudgey. So fudgey that when you bite into the brownies, it gets stuck to your front teeth and you look slightly crazy if anyone sees you smile! They're THAT good.

I make my famous chocolate cake every year but this year I put a twist on the classic, pomegranate! It might sound strange but the slight sourness that pomegranate molasses has compliments the bitterness of dark chocolate so well. A total flavour bomb. Especially when you go all out like I have (well it is a birthday weekend!) with whipped cream and ganache frosting...heaven!
Avocados have been pretty expensive lately so I started playing around with my regular healthy chocolate mousse recipe so I could still get my chocolate fix without paying an arm and a leg. I love sweet potato in sweets, it's such a gorgeous texture, mild flavour and pairs so well with cacao.
I'm not going to lie, I have eaten SO many of these salted coconut bars lately. It's like heaven in a bite. They are just like healthy bounty bars but ten times better if you ask me. The coconut filling actually tastes like a coconut pudding with lots of texture and a subtle sweetness.
Strawberries and cream are such a dream. I love dunking fresh and fragrant strawberries through a big pool of just-whipped vanilla cream. And I wanted to translate these flavours over into a plant-based version so everyone could experience the yumminess!

Brownies. Not much to say really because they speak for themselves. Moist, gooey, chocolatey, and even better warm from the oven! Or crumbled atop vanilla bean ice cream with caramelised banana and toasted coconut chips..yeah ok, back to reality where I actually only have the brownies and possibly a verrry ripe banana somewhere ha!
