Chocolate Fudge Zucchini Brownies
In case you needed any extra help getting through this crabby Melbourne week, I've got you sorted with these incredible chocolate fudge zucchini brownies. They are ridiculously good and fudgey. So fudgey that when you bite into the brownies, it gets stuck to your front teeth and you look slightly crazy if anyone sees you smile! They're THAT good.
Two whole cups of grated zucchini with the skin on is included in these babies to up the fibre and give you the bounciest, most moist brownies ever.
Store in an airtight (if they last that long!) and enjoy all week long!
Chocolate Fudge Zucchini Brownie
Super moist and chocolatey!
Ingredients
- 2 packed cups zucchini, grated
- 1/2 cup extra virgin olive oil
- 1 cup rapadura sugar
- 1/2 cup cacao powder
- 2 tsp baking soda
- 1 tsp salt
- 2 tsp vanilla extract
- 2 cups wholemeal spelt flour
- 1/4 cup dark chocolate, chopped
- as many walnuts as you like
Instructions
Preheat oven to 180 degrees Celsius.
Place everything except dark chocolate and walnuts into a stand mixer fitted with a paddle.
Combine everything very well then place batter into a baking paper lined square brownie pan.
Top with chopped dark chocolate and walnuts, bake for 30 minutes or until a skewer comes out clean.
Cool completely in the brownie pan (otherwise it might crumble) then turn out and slice.
