Pumpkin Spice Cookies
Even though Halloween is not something that is huge in Australia, I love seeing the festivities from overseas - all the dress ups and house decorations! I love watching the Modern Family halloween specials too! I think they are just too funny and love the competitiveness that Claire has for being the scariest house in the neighbourhood while her husband is petrified of everything! I also love seeing the halloween-inspired treats and recipes on instagram featuring all the delicious autumnal flavours with the most inventive cake frosting jobs! I saw one the other day that had a mud cake covered in a white frosting with an orange syrup dripping down over it with purple fairy floss/cotton candy - too cool! Also - guilty pleasure, but i seriously hang out waiting for the annual Jimmy Kimmel 'I told my kids I ate all their halloween candy' video! It's just too cute and funny!
I also can't get over how skilled pumpkin carvers are! I can barely cut an avocado straight let alone an intricate design out of super tough and thick pumpkin skin! I always wonder what people do with the pumpkins though..do you eat them after you've carved them? or are they just for decoration? if you know or would like to share what you do with your pumpkin - please leave me a comment on the post, I'd love to find out!
Anyway, I'm a sucker for pumpkin spice-anything and am incredibly jealous of our northern hemisphere friends who can enjoy pumpkin spiced lattes all season long! So because I can't get a latte, I made some pumpkin spice cookies! These are a bunch healthier than the usual halloween treats but they don't skimp on flavour in the slightest. They're super easy to make, just throw everything into a bowl and mix basically! I have not been able to stop eating them, and love having one with a coffee for morning tea - that's kinda like a pumpkin spice latte isn't? Coffee + pumpkin spice cookie = pumpkin spice latte? haha.
And for a little extra indulgence, I drizzled some white chocolate over the top because the only thing better than pumpkin spice cookies is pumpkin spice cookies with white chocolate!
Pumpkin Spice Cookies
Ingredients
1 cup self-raising wholemeal flour
1 cup rolled oats
1/2 cup pumpkin puree, cold
1/2 cup rapadura sugar
1/2 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
1/2 cup coconut oil, melted
Method
Preheat oven to 180 degrees Celsius (170 if fan-forced)
Place all ingredients into a mixing bowl and combine well
Shape dough into equal sized balls (a little bigger than golf balls) and place on a baking paper-lined tray
Press the balls down so they flatten out
Bake for 15 minutes
Cool completely on a rack and drizzle with some white chocolate if you're feeling indulgent
