As many of you who follow me on instagram know, I have been working on something so special for what seems like AGES now! I wanted you to be the first to know that I have spent the better part of the year trying, testing, photographing, and building my FIRST EVER recipe ebook! And what's better?
It's FULL of festive recipes in time for the holidays!
Christmas and the holiday season is my absolute favourite time of year. I love cooking festive foods, gifting my loved ones little jars and bags of gingerbread, candied nuts, and festive trail mixes, decorating my christmas tree (i'm the queen of the decorations - it's all colour-coordinated haha!), watching christmas movies like love actually, going to see all the christmas lights and displays around melbourne, and having time off to relax.
I am so proud of how it is looking, and more importantly - how everything is tasting! I've included recipes for everyone - there's gluten-free, vegan, grain-free, and raw recipes and then some! I created these recipes with a focus on wholesome, healthy ingredients to stave off all the over-indulgence normally experienced during the holiday season. As well as recipes that could be easily thrown together to take to family and friend's houses for get-togethers, recipes that are perfect to make and package up for colleagues and friends, and recipes that you'll want to keep making all year round.

So currently we are leaving Winter in the southern hemisphere and gearing up for it in the north. This pumpkin, coconut, & peanut butter soup is perfect for the in-between-season situation everyone is in at the moment as it's equally refreshing as it is warming <3
Pumpkin, Coconut & Peanut Butter Soup
400g pumpkin, peeled and cubed
1 small sweet potato, peeled and cubed
1 litre vegetable stock 5 spring onions, sliced including green part
3 garlic cloves, diced
1/4 tsp chilli powder
3 tbs peanut butter
1/3 cup coconut milk
1 tbs coconut oil
Place oil, garlic and spring onions into a pot and saute on medium heat for 2-3 minutes
Add in everything else and simmer until the pumpkin and sweet potato cubes are tender
Use a stick blender in the pot to blend until super smooth
Top your bowl of pumpkin, coconut, & peanut butter soup with extra coconut milk, toasted peanuts, extra chilli and spring onions
