Salted Chocolate Cookies
Sometimes i'm actually so lazy on the weekend that i don't get around to eating until it's nearly lunch time. bad, i know. but i'm just sleepy and not that hungry right away and usually just enjoy basking in the sunshine in the backyard with my (fur) baby jessie moomoo and isaac over a cup of coffee.
Then I made these mini salted chocolate cookies and felt they were the most perfect accompaniment to the weekend sloth situation. so now we enjoy the sun in our sling chairs with our kitty cat and cups of coffee that we dunk our little bites into. it's so perfect, i'm upset i didn't think of it sooner.
i will admit that nothing will compete with teddy bear biscuits dunked in a cup of instant blend 43 coffee with milk (shocking habit..thanks dad) but these little cookies are far less processed, not as sweet and much higher in fibre than their store-bought counterparts so i'll take them any day! and that is called having your cake and eating it too!
Salted Chocolate Cookies
Ingredients
½ cup almond butter
1/3 cup rapadura or coconut sugar
½ cup buckwheat flour
1-2 tbs almond milk
1 egg
½ cup chopped good quality dark chocolate
Pinch of sea salt for batter and extra for on top of cookies
Method
Preheat oven to 160oC
Place almond butter and egg into a bowl and mix with an electric mixer on low until combined
Add in the sugar, flour, and a big pinch of sea salt and combine again
Add the almond milk in ONLY if the mixture is quite dry/hard to combine
Place small balls (1 tsp) of dough onto a baking tray lined with baking paper until all the mixture is gone
Slightly flatten the cookie balls out and sprinkle with sea salt
Place in oven for 15-20 minutes until golden brown
Devour!
