Lime & Mango Slice
I've always been one to pick zesty flavours over caramel/chocolate flavours because I find them super flavoursome and generally not as sweet. I always love enjoying a raw slice but they always have dates in them but I am actually sorbitol-intolerant and dates have a pretty large chunk of sorbitol in them. So to save looking 6 months pregnant after a coffee and cake date, I always end up going to something else. Plus the price tag on those slices are pretty hefty too!
I figured if I made them at home, I could invent a date-free version and have a whole tray of slice for the cost of one piece at a cafe and so was born my lime & mango slice. I also ended up making these nut-free so they are school-friendly!
Ingredients
Base
1 cup desiccated coconut
1 1/4 cup rolled oats
1 tbs coconut oil
150g dried unsweetened mulberries (you can pick these up at any health food or bulk food store) - soak in boiling water for 5 minutes then drain well
Topping
6 tbs coconut butter
6 tbs coconut oil
4 1/2 tbs maple syrup
4 1/2 tbs lime juice
3 mango cheeks, sliced thinly
Method
Place all base ingredients into Vitamix or food processor and pulse until well combined
Place into a loaf tin, and press into the sides and even out
Place into fridge for 30 minutes
Place all topping ingredients into Vitamix or food processor and blend on low until well combined
Place mango slices on top of the base then pour the topping over and smooth out well
Put into the fridge for at least 60 minutes
Slice and enjoy!
