Zesty Lemon Buttermilk Loaf
So as it turns out, it's not just me who loves lemon cakes! You guys had so much positive feedback that I thought I'd post the recipe for this zesty lemon buttermilk loaf here for you all to find :)
It's really yummy with a cup of coffee for afternoon tea because it's not too sweet at all. You can sub in any flavour instead of lemon as well, orange is lovely or lime. Even a dash of rose water, with some crushed pistachios on top with icing for something really special!
Zesty Lemon Buttermilk Loaf
Ingredients
2 cups wholemeal flour
1/2 cup coconut/rapadura sugar OR 1/4 cup Natvia
1 cup buttermilk
1 egg
1/4 cup olive oil
Juice and zest of 1 lemon (add more if you like!)
1/2 cup desiccated coconut
1 1/2 tsp baking powder
1/2 tsp baking soda Pinch of salt
Method
Preheat oven to 180 degrees celcius
Mix all dry ingredients together
Combine wet ingredients in a separate bowl and then pour into dry ingredients
Mix together until just combined and spoon into a lined loaf tin (25cmx12cm ideally)
Bake for 45-50 minutes until a skewer comes out clean
If you'd like to add icing, mix 1/2 cup icing sugar with 1 tbs water and pour over the top
Add less water for a thicker icing!
